These Parmesan Za’atar Swirls with Hot Honey is a an updated version of Za’atar Rolls I posted back in 2017.

This version is made with puff pastry rather than a yeasted dough and has 2024’s trendiest condiment, hot honey to add some spicy sweetness to the herby and salty parmesan and za’atar filling.

Parmesan Za

By using puff pastry instead of yeasted dough as in the Za’atar Rolls recipe from Joudie Kalla, the preparation time is significantly reduced, making these Parmesan Za’atar Swirls with Hot Honey an ideal recipe to have on hand for the upcoming festive and party season. The only planning you need is to have 2 ready made puff pastry sheets in the freezer that can be defrosted a few hours before and a jar of za’atar on standby.

Hot honey—honey heated and infused with chilies—is having a moment that’s not fading any time soon. Although it seems to have gained popularity in New York, it actually has roots in Brazil, where chilli infused honey has been used in both cooking and medicine for centuries. Recently, there’s been a growing trend of blending sweet and savoury flavours, think of salted caramel and the trend of drizzling hot honey on a pizza (which is delicious!) has expanded far beyond pizza. Parmesan Za

The recipe is super easy. Place one sheet of pastry on a baking tray, spread with a mixture of za’atar, parmesan and olive oil and place the second sheet of pastry on top. Cut into equal sized strips with a pizza cutter and twist and swirl the strips into a spiral. Brush with milk or beaten egg and bake. And, of course, don’t forget the hot honey. Drizzle the swirls as they come out of the oven and serve immediately.

Parmesan Za'atar Swirls with Hot Honey

A delicious party snack made with puff pastry, parmesan then drizzled with sweet and spicy hot honey

Ingredients
  

  • 50 g parmesan cheese grated
  • 125 ml za’tar
  • 75 - 100 ml olive oil
  • 2 sheets pre rolled puff pastry defrosted - (around 30cm x 20cm or so per sheet)
  • Flour for rolling
  • Some milk or egg for brushing
  • Hot honey to serve

Instructions
 

  • Mix the cheese and za’atar in a bowl
  • Add the olive oil in stages, mixing until you have a thick but easy spreadable paste
  • Sprinkle some flour on a clean surface and unroll one sheet of puff pastry
  • Spread the za’atar mixture on top of the pastry making sure the whole sheet is covered
  • Unroll the 2nd sheet of pastry and place on top of the sheet covered in the za’atar mixture making sure they align as much as possible
  • With the longest side of the pastry closest to you, use a pizza cutter and cut into 12 equal strips
  • Grab the two ends of a strip and twist each end in the opposite direction, then swirl into a spiral tucking the end underneath to create a spiral
  • Place on a lined baking sheet and place in the fridge for at least 20 minutes
  • Heat the oven to 200 degrees C
  • Remove the swirls from the fridge and brush with the milk or a beaten egg
  • Bake for about 20 minutes until golden brown and the pastry is cooked through
  • Drizzle with the hot honey and serve immediately
