Mix the cheese and za’atar in a bowl
Add the olive oil in stages, mixing until you have a thick but easy spreadable paste
Sprinkle some flour on a clean surface and unroll one sheet of puff pastry
Spread the za’atar mixture on top of the pastry making sure the whole sheet is covered
Unroll the 2nd sheet of pastry and place on top of the sheet covered in the za’atar mixture making sure they align as much as possible
With the longest side of the pastry closest to you, use a pizza cutter and cut into 12 equal strips
Grab the two ends of a strip and twist each end in the opposite direction, then swirl into a spiral tucking the end underneath to create a spiral
Place on a lined baking sheet and place in the fridge for at least 20 minutes
Heat the oven to 200 degrees C
Remove the swirls from the fridge and brush with the milk or a beaten egg
Bake for about 20 minutes until golden brown and the pastry is cooked through
Drizzle with the hot honey and serve immediately
