Egyptian Feta Salad

Deliciously fresh, packed with flavour and super easy to make. Serve at your next barbecue.

Ingredients
  

  • 250 g feta cheese
  • 4 tbsp extra virgin olive oil
  • juice of 1 lemon
  • 1 tsp black pepper
  • 2 medium cucumbers deseeded and diced
  • 1 red onion finely chopped
  • 3 tbsp chopped fresh mint
  • 3 tbsp chopped fresh dill
  • 3 tbsp chopped fresh flat-leaf parsley
  • salt to taste

Instructions
 

  • Crumble the feta into a bowl and mash with the olive oil and lemon juice
  • Add the black pepper
  • Add the cucumber, onion and herbs and gently mix to combine
  • Taste and add salt if needed
  • Serve immediately
