This Stone Fruit Halloumi Salad is inspired by the stunningly beautiful Burrata, Heirloom Tomato & Stone Fruit Salad made by my friend Bianca a while back and the Tomato and Blood Orange Salad I posted earlier this year. This salad truly is summer on a plate, an explosion of flavours and colours with salty cheese, zingy citrus, sweet fruit and punchy pesto. It’s more an idea than a recipe and super quick to get ready.

The idea of combining citrus and tomato is new to me but it just works. Add some sweet stone fruit and you have a winning summer salad for the warm days ahead. If you are not in the mood for pesto, don’t feel like making or don’t feel like buying head to the Tomato and Blood Orange Salad recipe and make that Tahini and Soy dressing. It goes brilliantly with this salad, in fact it goes brilliantly with most salads. It’s become my go to dressing, also making a great sauce for a quick veggie noodle lunch.

And new to the mix is my Listening Partner sessions. Why do I need a Listening Partner? Being a photographer or stylist can be a lonely job. Most of the time you are the person on set that the client and your team looks at to have all the ideas and solutions during a shoot. Sometimes you need a soundboard for a creative idea or concept or you just feel stuck and uninspired. Maybe you have a client that expects the world but do not want to pay you, and just want a partner who knows the business to chat to and get perspective on how to manage that client (or walk away). Perhaps you are starting out and need a few pointers of where to begin your career or how to take the next step.

These Listening Partner sessions are for you to chat to someone who has been there, started a food photography career (not having a clue where to start) and have felt stuck more than once. I am here to listen, give advice (creative or technical), discuss ideas and spark inspiration. I am the listening parter who knows how you feel but will not steal your clients or jobs.

Ingredients
  

  • 3 nectarines sliced
  • 200 g tomatoes sliced or halved depending on size
  • 2 clementines, naartjies or mandarins peeled and sliced
  • 200 g halloumi cheese sliced and grilled to golden on each side
  • 80 ml fresh basil pesto

Instructions
 

  • Place the nectarines, tomatoes, citrus and cheese on a platter
  • Dress with dollops of pesto
  • Garnish with fresh basil leave and serve
