These Mince Pie Slices will give you everything you love about traditional mince pies.
They are buttery, crumbly, gooey, rich, fruity and a bit boozy but without the faff of making traditional mince pies. Christmas decadence in every bite.

If like me, making pastry is not your favourite thing and like me, you are not that good at it, these Mince Pie Slices is the perfect way for something homemade and as good (or even better) as the traditional version.

The Mince Pie Slices is sort of based on a Millionaire Shortbread. A layer of buttery shortbread, topped with a thick layer of fruit mince and then a layer of crumble mixed with small pieces of marzipan.

I took all the shortcuts I could. I made one batch of the shortbread mix and as soon as it was mixed to a sandy, breadcrumb texture, I kept a third of the mix aside for the crumble topping. The fruit mince mix is ready made from a store bought jar and the marzipan was ready made from Aldi too.

The crumble is adapted from a Nigel Slater recipe. I love everything frangipane or marzipan and bought some marzipan earlier this year not quite knowing what I would do with it. For this recipe I took 200g of marzipan and broke it into small pieces, then mixed it with the shortbread mix set aside for the crumble. If marzipan is not your thing, you can omit it and make a standard crumble topping. For a bit of texture, add some oats into the mix or ground almonds.

Mince Pie Slices
Ingredients
- 370 g flour
- 300 g butter
- 115 g caster sugar
- 1/2 tsp salt
- 411 g jar of fruit mince
- 60 g flaked almonds
- 200 g ready made marzipan
Instructions
- Line and butter a 20cm square baking tin
- Preheat the oven to 180 degrees C
- Place the flour, butter, sugar and salt in a food processor
- Blitz until the mixture looks like fresh breadcrumbs
- Remove a third of the mix and set aside
- Blitz the remaining mixture until it starts to come together in a ball
- Remove from the food processor and place the dough in the baking tin and press down into an even layer
- Spread the fruit mince on top
- Top with the flaked almonds - reserving a quarter for the topping
- Break the marzipan into small hazenut size chunks and gently give it a mix with the flour and butter mixture that was set aside
- Roughly crumble this marzipan mix over the fruit mince layer and press down gently to make it sort of even - you want it to be rustic
- Sprinkle with the remaining almonds
- Bake for about 30 - 35 minutes until the top is a golden brown and the shortbread is baked through
- Cool completely in the tin then remove and slice
