This is my version of the famous Marry Me Chicken recipe where legend has it that it tastes so good that you can expect a marriage proposal from the person you are serving it to. Apparently Emily Blunt made it for husband John Krasinski before his proposal.

I did not get another marriage proposal but I can vouch that it is that good. The recipe for Marry Me Chicken was created in 2016 by Lindsay Funston, the Editor-in-Chief at Delish magazine and the dish uses elements of creamy Tuscan chicken, replacing the usual fresh baby tomatoes with sun dried tomatoes. The sun dried tomatoes adding sweet and tangy flavours to the creamy base sauce.

I came across the recipe after The New York Times announced that their version of Marry Me Chicken was the most popular recipe on the site in 2023. My sister in law made it for us last year and it was absolutely delicious so I had to make it again and share it here.

My version of Marry Me Chicken deviates slightly from all the versions out there, simplifying it even more in order to make it a perfect midweek meal. I replaced the chopped sun dried tomatoes with sun dried tomato pesto, eliminating the need to chop them. And I prefer chicken thighs to breast so used deboned thighs (with the skin on).

Fresh thyme is too finicky so I replaced it with dried oregano and as we struggle to find fresh cream from time to time here in Abu Dhabi, I used a tin of coconut milk and it worked a treat.

And to be perfectly honest, I don’t think the recipe needs the parmesan cheese so have marked it as optional in my recipe below.

My version of the famous Marry Me Chicken recipe where legend has it that it is so good that you can expect a marriage proposal from the person you are serving it to

Ingredients
  

  • a glug of oil for frying
  • 6 boneless chicken thighs
  • sea salt and freshly ground black pepper
  • 2 garlic cloves finely chopped
  • 100 g sun dried tomato pesto
  • 45 ml chicken stock concentrate
  • 15 ml dried oregano
  • 5 ml chilli flakes
  • 400 ml / 1 tin coconut milk
  • 25 g finely grated Parmesan optional
  • torn fresh basil for serving

Instructions
 

  • Preheat the oven to 180 degrees C
  • Use a large ovenproof skillet or frying pan and heat some oil over a medium heat
  • Season the chicken thighs generously with salt and black pepper and fry about 5 minutes per side until golden brown
  • Transfer the chicken to a plate
  • Add the garlic to the pan, adding a bit more oil if needed
  • Cook the garlic for a few minutes then add the pesto, stock concentrate, oregano and chilli flakes
  • Cook while stirring for about 5 minutes
  • Add the coconut milk and stir until the sauce is at a simmer
  • Return the chicken pieces with all the accumulated juices
  • Place the frying pan in the oven and bake for about 30 minutes until the chicken is cooked through and the sauce has thickened
  • Serve the chicken scattered with torn, fresh basil leaves and a sprinkle of chilli flakes if desired
