No mess, no fuss, thrown together in a flash. Just the way I like it. This Peppermint Crisp Biscuit Cake is truly irresistible and has become a huge hit on Pinterest. It is almost impossible to stop going back for another piece to nibble on.
Fudgy, very rich and sweet this should in all honesty be eaten in small quantities only. The Lotus biscuits on top makes it super pretty but good old fashioned tennis biscuits will do the trick too.
This is a fool proof quick dessert life saver. Get everything from the shops and it’s a quick mix, fill and decorate. Mix the yoghurt with some caramel, spoon into the meringue nests and crumble the peppermint crisp on top. Make it a bit more “gourmet” by adding a teaspoon of white miso.
The first Peppermint Crisp recipe I published – all the way back in 2014! It takes all the elements of a classic Peppermint Crisp Tart but served as individual portions in a glass. A much more elegant way of enjoying those nostalgic flavours.
This Peppermint Crisp Cheesecake has been incredibly popular since I published it. Made in a pressure cooker it is a bit of work but worth all the effort. The cheesecake needs to have a slight wobble at the end of the cooking time, it will firm up a bit in the fridge. I’m often asked if it can be made in a conventional oven. I have not tested it so the best alternative I can offer is that you make your favourite vanilla cheesecake, spread a layer of caramel and a liberal amount of crushed peppermint crisp on top.
Take a classic tres leches cake (three milk cake) and make it South African. A light sponge soaked in evaporated milk, full cream milk and Amarula. Decorated with luscious whipped cream mixed with caramel and sprinkled with everyone’s favourite chocolate. It does not get better than this!
This is my midnight emergency cake. A quick chocolate cake baked in a mug (2 minutes in a microwave to be exact) studded and topped with peppermint crisp. Late tnight crisis averted!
