This Holiday Mimosa is one of those super simple recipes that impresses everyone each and every time. So add it to your bag of tricks this coming festive season.

All you need to do is simply pour the orange juice into extra-large ice cube moulds instead of a champagne flute and freeze it. But before popping it into the freezer, garnish each cube with a slice or two of fresh orange and a stem of red currants. Feel free to swap the red currants for fresh raspberries.

When the time comes to serve, pop the frozen orange ice cube into a glass, top up with champagne, sparkling wine or prosecco and garnish with a sprig of fresh rosemary. I prefer using a coup cocktail glass (the cube won’t fit into a flute) as that shows off the frozen cube and garnishes beautifully. And that is it! I have yet to meet someone who does not love being served a Mimosa this way.

Holiday Mimosas

Servings 4 drinks

Ingredients
  

  • 4 orange slices
  • 4 stems red currants
  • fresh orange juice
  • 4 sprigs fresh rosemary
  • 1 bottle champagne or sparkling wine or prosecco

Instructions
 

  • Use extra large ice cube moulds and place an orange slice and sprig of red currants in each cube
  • Fill the cubes with the orange juice, cover with cling film and freeze
  • When ready to serve place a frozen orange juice cube in a coup cocktail glass
  • Top with champagne and garnish with a sprig of fresh rosemary
