Sometimes you need to take advantage of all the convenience out there and this Box Cake Apple Sponge Pudding is a perfect marriage of a premade cake mix and a tin of pie apple slices.
Granted, it’s not much of a recipe but when the urge for a baked pudding hits this Apple Sponge recipe has to be the quickest way to answer all cravings quickly.

My mom used to make an apple sponge pudding where she would layer baking apples from a tin in a pie dish and cover it with a cake batter. Once it was baked she would pour over a melted butter and honey sauce. It was this apple sponge pudding I was craving but as I did not have the recipe I decided to just wing it with a shop bought vanilla cake mix and a tin of apples.

I drained the apples, reserved the liquid and spooned the apples into the bottom of a greased pie dish. I then made the batter from the box cake as directed on the packaging and spooned it on top of the apple layer. Placed in the oven and baked as per the cake instruction but checked whether it was baked a few times because I was not baking a cake as intended with the box cake mix.
As soon as the apple sponge was baked I removed it from the oven and poked it with a fork. I brought the reserved apple liquid to a quick boil and poured it over the cake to soak into the batter. And that was it!
Served with lashings of custard and my cravings were answered with minimal effort.

Box Cake Apple Sponge Pudding
Ingredients
- 1 tin 765g pie apple slices (or pears)
- 1 box vanilla cake mix
- custard or ice cream for serving
Instructions
- Preheat the oven to 180 degrees C (or as indicated on the cake mix instructions)
- Drain the liquid from the pie apple slices and set the liquid aside
- Spoon the apples slices in a greased pie dish
- Make the cake batter as per the instructions on the box and spoon over the apples
- Bake at the temperature given until the cake batter is cooked through (start checking 15 minutes before the given time as you are not baking a cake)
- Once the batter is cooked through, remove from the oven and pierce all over with a fork
- Bring the reserved juice/syrup from the tin to a boil and pour over the batter
- Let it stand for a few minutes and serve with custard
